Chicken Sausage, Spelt and Pepper Skillet (with a vegan swap)

Thereā€™s nothing that says ā€˜comfortā€™ like a warm skillet and when it comesĀ to flavor, color and texture, this hits on all cylinders.

My Chicken Sausage, Spelt and Pepper Skillet from my book, Eat Like You Give a Fork: The Real Dish on Eating to Thrive, combines protein (you can swap a plant-based sausage like LightLife or Beyond Meat, or do tempeh), slow burning superfoods grain and veggies to the table in a meal that satisfies and literally brings itself together in the oven. The grain cooks perfectly in the oven because thereā€™s plenty of liquid to drink up. A great family meal when it gets coupled with a fresh salad and maybe an extra scoop of spelt.

PRO-TIP: If you canā€™t find spelt, long grain brown rice is a good swap.

A hearty pasta salad thatĀ keeps it light, fresh and nutrient-dense.

Give me a great pasta recipe that's also high protein and low carb and it's on repeat in my household! The combo or artichoke hearts, garbanzo beans and tomatoes with that yummy vinaigrette just hit right and remind me of wonderful times studying in Italy when I was in college.

Garlic and Rosemary Baked Olives

National Garlic day is a must to celebrate!Ā 

INGREDIENTS:Ā 

  • 24 ounces mixed pitted olivies (kalamata, Castelvetrano, Sicilian, colossal, and any other varieties)
  • 2 tablespoons olive oilĀ 
  • 3 garlic cloves, minced
  • 1 tablespoon chopped fresh rosemary leavesĀ 
  • 1/2 teaspoon lemon zest
  • 1/2 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground white pepperĀ 

DIRECTIONS:Ā 

  1. Preheat the oven to 400F.
  2. In a medium bowl, combine the olives, olive oil, garlic, rosemary, lemon zest, lemon juice, sea salt, and white pepper. Spread the olives over a rimmed baking sheet and roast for 15-20 minutes, until sizzling. Let cool.Ā 
  3. Serve the olives or store in a seal jar in the refirigrator for up to 21 days.Ā

Happy first day of winter!

I can't believe we're here already.Ā  It's the first day of the winter solstice and Christmas is right around the corner.Ā  Even though I live in Southern California, it can get cold at night and there's nothing that I love more than a nice curry.Ā  Hence, my inspiration for this gorgeous comfort dish using the easy and delicious meals from Kevinā€™s Natural Foods for the #kevinsrecipechallenge.Ā

The Ultimate Frozen Buddha Bowl

Spring keeps calling you to try this frozen buddha bowl!Ā 

INGREDIENTS:Ā 

  • 1/2 frozen banana, peel left on
  • One 3.5 oz. packet frozen no-sugar-added acai or pitaya
  • 1 teaspoon ground flaxseed
  • 1/4 cup unsweetened non dairy milk (almond, rice, coconut, soy, hemp)Ā 
  • 1/2 teaspoon spirulina powderĀ 
  • 1/2 teaspoon raw honey

Optional Toppings:

  • Pomegranate arilsĀ 
  • Fresh pataya and lychee fruitĀ 
  • Grape halvesĀ 
  • Hulled sunflower seeds or raw hemp hearts
  • Maca powderĀ 
  • Unsweetened cocoa powder

DIRECTIONS:Ā 

  1. Wash theĀ ALL fruitĀ withĀ eatCleaner Fruit and Vegetable WashĀ and pat dry with paper towels.
  2. In a food processor or blender, combine the banana, acai, flaxseed, milk and coconut oil. Blend on medium to high speed for 15 to 30 seconds, until smooth and creamy. Pour into a bowl and add the yoghurt, spirulina, and honey. Stir until completely smooth.Ā

Ingredients:

  • 3/4 cups red quinoa (if you canā€™t find red, use any color you can find)
  • 1 1/2 cups low sodium vegetable broth
  • 1/2 cup dried cranberries
  • 2 tablespoons Earth Balance buttery spread
  • 2 links chicken or vegan sausage (try Field Roast)
  • 1 tablespoon minced garlic
  • 6 cups spinach leaves
  • Freshly ground black pepperĀ 
  • 2 T pine nuts, toasted

Hereā€™s how you elevate each ingredient:

šŸ’œRoast the purple sweet potatoes at 400F for 30 min (these were little ones) to bring out their utmost creaminess.
šŸ’šMassage that kale with dressing. SorryĀ @dave.aspreyĀ i know how you feel about kale but this is the best way to enjoy it. Get into it good. I used a mix of baba ganoush - smoky and tangy from vinegar- with prepared Greek-style salsa and fresh lemon. Sometimes mixing sauces like a chemist works šŸ˜œ.
šŸ’™Black beans get rinsed well and dressed up wirh a little cumin. Taste them first.
šŸ§”Toasted pumpkin seeds add great crunch and a little warmth. Sprinkle with smoked paprika for more flavor or cayenne for a little kick.
