Strawberry Coconut Nice Cream

I scream, you scream, we all scream for nice cream! When you go "nice," you never go back. It doesn't matter if you're not a full-time vegan-this will become your go-to dessert for every day of the week. With just five ingredients, it couldn't be any easier. Scoop it, spoon it, and love it up.

INGREDIENTS

- 2 (14-ounce) cans unsweetened full-fat coconut milk
- 4 cups sliced fresh or frozen strawberries
- 1 vanilla bean, split lengthwise and seeds scraped out (see Note)
- 2 frozen bananas, peel left on (see page 99)
- 1 teaspoon granulated stevia

OPTIONAL TOPPINGS
- Unsweetened shredded coconut
- Cacao nibs
- Crushed walnuts

 

DIRECTIONS
1) Refrigerate the cans of coconut milk overnight. Open each can and scoop only the thick, white coconut cream into a large bowl or the bowl of a stand mixer fitted with the whisk attachment; discard the watery liquid left in the can or refrigerate it for another use (it's good for smoothies!). A Smoothie-a-Day Spring Challenge : You GLOW Smoothie

 You GLOW Smoothie

Vegan/Gluten-Free/Nut-Free
Makes 2 servings

 

Ingredients:

  • 2 cups water
  • 1 cup plain Greek yogurt (coconut or almond milk for non-dairy sub)
  • ¼ cup unsweetened tart cherry or pomegranate juice
  • 1 cup mixed berries (blueberries, raspberries and blackberries)
  • ½ cup baby spinach
  • 1 tablespoon chia seeds
  • ½ cup ice

 Directions:

1. Wash all produce with eatCleaner Fruit + Veggie Wash.

2. Add ingredients in order above.

3. Blend until smooth and enjoy cold.

Pita Nachos with Mango Salsa

I went head to head with renowned YouTube and Cooking Channel chef Laura Vitale on the show “Recipe Rehab” and won this challenge – taking nachos to the next level but keeping them healthy and delish. This recipe was featured in the Harper Collins book, Recipe Rehab: These are full of protein with the chicken and beans and a ton of vitamin C from the mangoes and tomatoes. Beautiful flavor and a whole lotta’ fresh!!

Whole grain pita chips replace fatty corn chips, standing up to the toppings without getting soggy.

Makes 6 servings

Ingredients:

3 Rounds Whole Wheat Pita Bread, cut in half horizontally then cut into 8 pieces per round (48 pieces total – if pita is too thin to cut horizontally, use 6 rounds for a total of 48 pieces.)

1 C grilled chicken breast, cubed

1 can black beans, drained and rinsed

1 tsp cumin

1 1/2 Cup Lowfat/Nonfat Monterey Jack or Cheddar

Macadamia nut banana pancakes with coconut syrup

For me, this Is Hawaii on a plate. There is nothing more decadently delicious than the combination of buttery, rich macadamia nuts with bananas and coconut syrup. Just thinking about this right now makes me want to cry, it's so delicious. Takes Jack Johnson's "Banana Pancakes" song to the next level.

Ingredients

MACADAMIA NUT BANANA PANCAKES

  • 1½ cups all-purpose gluten- free flour
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking soda
  • ¾ teaspoon baking powder
  • 3 large eggs
  • 2 cups unsweetened almond milk or coconut milk
  • 2 medium-large very ripe bananas, peels on (see Note, page 99)
  • 1 teaspoon pure vanilla extract
  • ½ cup chopped macadamia nuts

COCONUT SYRUP

Creamy Italian-Style Tomato Basil Soup

 
If you ever thought Campbell's set the standard for tomato soup, then your tastebuds matured past the 2nd grade, you probably realized it was pretty gross. That flat, flimsy liquid tomato paste should probably just stay in the iconic can as kitchen decor.
 
With that, I invite you to reimagine the potential tomato soup could actually have and challenge you by saying - you haven't lived until you've tried my creamy (#vegan) Italian-style tomato basil soup.

Chef Mareyas MedMex Salad

When you have a hankerin for a hearty salad…you make my MedMex creation.

Here’s how you elevate each ingredient:

Roast the purple sweet potatoes at 400F for 30 min (these were little ones) to bring out their utmost creaminess.
Massage that kale with dressing. Sorry @dave.asprey i know how you feel about kale but this is the best way to enjoy it. Get into it good. I used a mix of baba ganoush - smoky and tangy from vinegar- with prepared Greek-style salsa and fresh lemon. Sometimes mixing sauces like a chemist works .
Black beans get rinsed well and dressed up wirh a little cumin. Taste them first.
Toasted pumpkin seeds add great crunch and a little warmth. Sprinkle with smoked paprika for more flavor or cayenne for a little kick.
I douse the @violife_foods Greek-style feta with good EVOO and Greek Freak seasoning from @spiceology 
Finish wirh fresh cilantro

Turkey Veggie Chili With Quinoa


Ingredients:

  • 1 cup quinoa, rinsed
  • 3-1/2 cups water, divided
  • 1/2 pound lean ground turkey
  • 1 large sweet onion, chopped
  • 1 medium sweet red pepper, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 can (15 ounces each) black beans, rinsed and drained
  • 1 can (15 ounces each) cannellini beans, rinsed and drained
  • 1 can (28 ounces) crushed tomatoes
  • 1 chipotle pepper in adobo sauce, chopped
  • 1 tablespoon adobo sauce
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup minced fresh cilantro
Optional toppings: Cubed avocado, onions, plain Greek yogurt

Directions

  1. Wash all veggies with eatCleaner. In a large saucepan, bring quinoa and 2 cups water to a boil. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat; fluff with a fork and set aside.

Mixed Root Veggie Chips

Talk about a fun way to eat the rainbow! You can use big carrots, beets, purple sweet potatoes, and parsnips to get a whole array of color on your plate. The best way to get these veggie chips uber thin is by using a mandoline slicer, but a strong word of caution: Please be careful. Use the cutting guard and don't multitask while you are slicing. Keep your focus on the very sharp blade in front of you. I don't want you making a finger chip. You can also use the slicing attachment on your food processor, or a special chopping tool. 

Ingredients: 

- 6 Medium assorted root veggies (carrots, golden beets, purple beets, sweet potatoes, parsnips, turnips), sliced paper-thin on a mandoline (4 cups total). 

- 3 tablespoons extra virgin olive oil. 

- 1 tablespoon ground cumin or tumeric. 

- Himalayan pink salt.

Filled with protein and fiber, vegetable omelets are a satisfying meal day or night (Serves 2). 

Ingredients:

  • 3 eggs
  • 1⁄4 teaspoon Kosher or sea salt (optional)
  • Dash black pepper
  • 2 teaspoons coconut oil, divided
  • 1⁄4 teaspoon minced garlic
  • 1 cup baby spinach
  • 1⁄4 cup bell peppers (red, orange, yellow), diced 1⁄4 cup red onion, diced
  • 1⁄4 cup tomato, diced
  • 1 large mushroom, thinly sliced 

Directions

  1. Wash any produce with our eatcleaner spray wash or washpowder. Let air dry on a paper towel.
  2. In a bowl, whisk eggs with salt and pepper. Set aside.
  3.  Heat 1 teaspoon coconut oil over medium-high heat in a saute or frying pan that has a lid. Add garlic, spinach, peppers, onion, tomato, and mushroom. Saute until veggies are soft, about 3−5 minutes. Remove vegetables from pan. Set aside in a bowl.
