Chicken Sausage, Spelt and Pepper Skillet (with a vegan swap)

Thereā€™s nothing that says ā€˜comfortā€™ like a warm skillet and when it comesĀ to flavor, color and texture, this hits on all cylinders.

My Chicken Sausage, Spelt and Pepper Skillet from my book, Eat Like You Give a Fork: The Real Dish on Eating to Thrive, combines protein (you can swap a plant-based sausage like LightLife or Beyond Meat, or do tempeh), slow burning superfoods grain and veggies to the table in a meal that satisfies and literally brings itself together in the oven. The grain cooks perfectly in the oven because thereā€™s plenty of liquid to drink up. A great family meal when it gets coupled with a fresh salad and maybe an extra scoop of spelt.

PRO-TIP: If you canā€™t find spelt, long grain brown rice is a good swap.

Plus, the only ā€˜sweetenerā€™ is from dates, and that wonā€™t spike your GI because theyā€™re full of fiber.

Proats are a staple in the bodybuilding community becauseĀ protein helps to take an otherwise starchy food and turn it into a šŸ¦¾ powerhouse.

Now, let's talk about dates.Ā  TheyĀ are hot.Ā  And I'm not talking about the ones you go on.Ā

In my 2023 trends report. My versionĀ offers about 1/2 the sugar of the leading packaged brand per serving with 11 g of protein, good fiber and natural sweeteners that donā€™t crash your blood sugar - and it tastes SO much better.Ā

The good fats - chia seeds, walnuts and unsweetened shredded coconut - will help you stay satiated all morning, and help your brain he...
