The Real Dish Dressing

TheĀ dressing that makes any salad taste phenomenal.Ā 

Ingredients

  • 3 tablespoons extra-virgin olive oil or avocado oil
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons amino acids
  • 2 teaspoons fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, crushed

Directions

1.Ā In a small bowl or jar with a lid, combine all the ingredients and whisk or shake to incorporate. Store in an airtight container (or the jar) in the refrigerator until ready to use, up to 10 days.

The Real Dish Row Salad

Spring calls for a colorful absolutely DELICIOUS saladĀ 

INGREDIENTS:Ā 

  • 4 cups arugula or baby spinach
  • 1 recipe The Real Dish Dressing (p.26 in the book)Ā 
  • 16 ounces or 3 (5 ounce) cans canned wild-caught tuna packed in water, drainedĀ 
  • Juice of 1/2 lemonĀ 
  • 2 teaspoons minced fresh dill leaves onlyĀ 
  • Sea salt and freshly ground black pepper
  • 3 cups assorted veggies (shredded carrots, baby heirloom or grape tomatoes, haricots verts, red and yellow bell peppers)Ā 
  • 1 cup cooked or canned chickpeas or cannellini beans (drained & rinsed, if canned)Ā 
  • 1 avocado, pitted and sliced into small chunks
  • 1 cup grapes, sliced in half

DIRECTIONS:Ā 

  1. Wash theĀ ALL the vegetablesĀ withĀ eatCleaner Fruit and Vegetable WashĀ and pat dry with paper towels.Ā 
  2. In a medium bowl, toss the arugula with 2 tablespoons of the dressing to coat. Arrange the arugula on a large platter as a bed for the other ingredients.Ā

Chef Mareyas MedMex Salad

When you have a hankerin for a hearty saladā€¦you make my MedMex creation. āœŒšŸ½

Hereā€™s how you elevate each ingredient:

šŸ’œRoast the purple sweet potatoes at 400F for 30 min (these were little ones) to bring out their utmost creaminess.
šŸ’šMassage that kale with dressing. SorryĀ @dave.aspreyĀ i know how you feel about kale but this is the best way to enjoy it. Get into it good. I used a mix of baba ganoush - smoky and tangy from vinegar- with prepared Greek-style salsa and fresh lemon. Sometimes mixing sauces like a chemist works šŸ˜œ.
šŸ’™Black beans get rinsed well and dressed up wirh a little cumin. Taste them first.
šŸ§”Toasted pumpkin seeds add great crunch and a little warmth. Sprinkle with smoked paprika for more flavor or cayenne for a little kick.
šŸ¤I douse theĀ @violife_foodsĀ Greek-style feta with good EVOO and Greek Freak seasoning fromĀ @spiceologyĀ 
šŸ’šFinish wirh fresh cilantro
